Favorite go-to recipe for an easy dinner

When I don’t know what to do with all the vegetables left in my fridge, I simply cut them, toss them with oil and season with salt and pepper and roast them in the oven for about 30 min (depending on what kind of vegetables and how big the chunks are). I stir them at least twice while roasting, and then top them with a couple of fried eggs or some greek yogurt, or both, and voilΓ‘ you have a meal!
